Ingredients: 3-4 lb roasting chicken, your choice of liquid and dry seasonings
1) Remove the giblets and neck from the chicken cavity. Rinse and pat dry. 2) Rub the thawed roasting chicken with olive oil and your favorite dry rub inside the cavity and on the skin. 3) Fill the liquid seasoning well with your favorite liquid. Add one tablespoon of your dry seasoning to the liquid. 4) Make a foil plug for the chickens neck. Place your chicken on top of the well – legs dangling. 5) Place in a COLD oven and heat the chicken and pot together. Cook at 3500 uncovered for 1 ½ – 2 hours. About half way through cooking, you might slice the legs away from the body to allow legs to cook thoroughly. Check for doneness with a meat thermometer. ENJOY!
Suggested Liquids: beer, red or white wine, Dr. Pepper, juice or your own creation Suggested Dry Seasonings: Cajun, Jamaican Jerk, blackening season and mixed herbs |
